SCD Grape Juice Jello

Everyone likes jello, right? Even if you don't, on this diet, its pretty much the best thing you'll get.
This is a very watered down version and can be made with grape juice or apple cider, since they are both safe on the SCD.

I took pictures, though I'm sure most know how to make it ;P.

i think i'll put them here as i add the recipes directions:

Ingredients:

3 cups of water

3 cups of grape juice, or apple cider (i used the latter, cause I'm out of grape juice..)

One package of unflavored gelatin, 4 packets



1. First, put 1 cup of water in a larger bowl. (very large..)

2. Add all 4 packets of gelatin into that cup of water and DO NOT stir




You can sorta see the thickening of the powder and the water.



3. Place the remaining 2 cups of water into a medium sized pot and wait for it to boil




4. After it's boiling, add to gelatin and water, then stir till completely dissolved




5. Add the 3 cups cider to the dissolved water and gelatin, stir.



6. When dissolved, pour into a large, glass pan, or whatever you have






then place in the fridge for four hours, or until solid!


i don't have another picture, because 1. its not done yet, and 2. I'm sure you know what jello looks like ;)


Now go make this, and then enjoy your sugar-free, watered-down jello that will taste very good if your on the SCD  diet. If your not, then this may taste very watery. But make at your own risk, either way, it'll be a lot better for you.

Coconut Flour Biscuits

Sound interesting, don't they?

I had some spare time today and decided to make them. Even the minute quantity in my latest batch of muffins (it was like 1/4 teaspoon per muffin) was hurting me, so i decided to find something a little more gentle. These have a teaspoon of honey per batch and take very little flour. Great, because coconut flour is EXPENSIVE! The original recipe had like two tablespoons of honey, which i thought was wayyyy too much. So i made it my own :) These are a little dry, but then again, most gluten-free, everything-free foods are. I'll post the pictures before the recipe, so you can see what your getting into before you dive in ;)

Yes, the answer is yes...

They weren't too crumbly, which was a bonus.

 To the right, is what i did with one of them. i put all natural peanut butter and a few banana slices on it. It was extremely good, and i loved it, where as most people would be like "BOR-ING". But when you can eat only like 5 different things, this became amazing. I think the filter on the photo added a nice touch, you agree?

Okay, okay, on the the actual recipe. I'll stop babbling now..;)


Ingredients:

1/3 cup Coconut Flour (you can get it at health food stores and some grocery stores)

5 TBSP  butter or coconut oil (softened. well, it can be melted too, i did that by accident and it still worked :P)

4 eggs

*1 teaspoon of honey (my change to the original)

a dash of salt

1/2 tsp baking soda

* dash of vanilla

*and 1/4-1/2 tsp of almond extract


note: i didn't want mine to have too much honey, so i added almond extract and some vanilla. If you want them sweeter, feel free to add 2 TBSP of honey. Or if you don't want them sweet at all (except for the natural coconut flavor) you could take all the sweeteners out. Blueberries, dried cranberries,pineapple or any small fruit would be wonderful additions to this, if you want scone-like biscuits.


Instructions:

1.Preheat oven to 400 degrees F

2.Put all ingredients into a medium size bowl and mix well with an immersion blender (what in the world is that?? ) or a hand mixer.

3. Using your hands (or an ice-cream scoop), carefully make nine balls, or seven, like me, and then mash them down with a spoon, or your hand. Then place them on a parchment covered baking sheet.

4. Bake for 12-15 minutes until browned at the edges.


and your done! Congrats, you just make a batch of wonderful coconut muffins biscuits! I keep writing muffins instead of biscuits, i just love them THAT much...

Intro :/

um well, an introduction post seemed necessary, so here goes.
I am a 16 year old girl who at the present, CANNOT  eat most foods. Its a very long story, so i'll summarize. So basically, last year i wasn't feelings so good, we went to a doctor, he took me off wheat and dairy. Did that diet for 6 months, very slight improvement. So we went to another doctor, this seems to happen to everybody with such issues. And i was put on a candita-killing diet. If you are not familiar with this diet, feel free to ask me, or use google. (google will explain it better, i can promise you).  But anyway, did that for 6 months too, didn't work. So i switched to a diet i cannot remember at the moment, will fix that later... So after being on that diet for like 4 months, i finally switched to the worse diet of all, the SCD, Specific Carbohydrate Diet. and i am not the best at explaining this one either. But on this diet, i can not have grains, dairy, most fruits, (at least in the stage i am in), starches, yes, that means potatoes, and a bunch of other random foods too. So all in all, its sucks.

that took less time than i expected...so here's why i have a blog now:

through all that, i have learned to make many gluten-free, 'everything-free', foods.
My most favorite thing to make has been muffins, so i do a lot of those.
But now i decided to share what stuff i have been making, and what has worked, and not worked :(

And the pictures of the food will be less than perfect, and my writing not the best. I love to write, but I'm a teenager and sometime i get lazy with my grammar. So bear with me, and i hope you will enjoy these recipes as much as i myself have ;D


SIDE NOTE: on second thought, there will be a few random posts here and there, mostly fan girl ones, cause i really like to ramble when i write. feel free to pass over those. >:)
